The Preparation Of Adapted Bread

A bread prepared from wheat gives the best result. Using whole wheat flour instead of wheat flour gives a bread with more dietary fiber. Because dietary fiber absorbs water, when using whole wheat flour, extra water is needed to obtain a smooth dough. Rye, oats or barley can replace wheat in a wheat allergy. Buckwheat is a suitable alternative if you are allergic to gluten. In order to obtain a good taste and to vary the structure and taste of bread, combinations of flours can also be used. For example, a loaf of cornmeal alone is difficult to prepare, but a combination of buckwheat flour with cornmeal can give a good result.

Fresh baker's yeast is the leavening agent in ordinary bread. If yeast is not tolerated, sourdough is an alternative leavening agent. Another alternative to rising bread is baking powder.

Sugar promotes the action of the yeast and also contributes to the colour of the crust. However, adding sugar is not necessary. For taste, barley, rice or corn malt syrup can be added in sweet breads instead of sugar. The sweetening power of these syrups is about half that of sugar.

Suitable for cow's milk-free, lactose-free, egg free and sugar free diet. Make sure to take a margarine that does not contain cow's milk. Also for a soy protein or soy oil free diet. Use sunflower oil to grease the baking tin or baking tray.

-350g Water
-25g Fresh Yeast
-8g Salt
-10 Sugar
