FOR THE BATTER
100g Full Milk
1 Egg (weighs 58-60g with shell)
2 Egg Yolks (from eggs that weigh 58-60g with shell)
100g All Purpose Flour
2 Egg Whites (from eggs that weigh 58-60g with shell)
FOR THE COATING
Or Icing Sugar
Oil Temperature: 180°C
Mix the milk, 1 egg, 2 egg yolks and salt with a whisk.
Add in the flour and mix well.
Whisk the egg whites and sugar till stiff peaks.
Add in and fold half of the meringue into the egg batter, and then the rest of the meringue.
This is the batter consistency.
Heat up the oil till 180°C.
Coat the banana with the batter.
Fried till golden brown.
Coat it with fine sugar or dust it icing sugar.
Finished product. Eat or serve while the banana fritters are still warm.
