FOR THE BATTER
120g Icing Sugar
70g Almond Flour
30g Hazelnut Flour (finely ground hazelnuts)
50g All Purpose Flour
150g Egg Whites
150g Melted Unsalted Butter
40g Mango Puree
FOR THE TOPPING
Preheated oven to 180°C.
Baking Mode: Top and bottom heating elements without fan.
Baking Temperature: 180°C
Baking Time: 12 minutes
Baking time may vary depending on the accuracy and type of your oven.
Mix the icing sugar, almond flour, hazelnut flour, all purpose flour and vanilla powder in a mixing bowl.
Add in the egg whites to the flour mixture.
Add in the mango puree and mix well.
Add in the melted butter and mix well.
Fill the baking mold with the cake batter.
Top with mango.
Bake at 180°C for 12 minutes.
Transfer it to cooling rack.
Finished product. Eat or serve while the banana fritters are still warm.
