Butter Crust Pastry - Plum Tart

Ingredients
(For 6 Persons)FOR THE DOUGH
250g All Purpose Flour
125g Cold Butter
4g Salt
40g Sugar
100g Cold Water
FOR THE FILLING
50g Fine Breadcrumbs
650g Plums
FOR THE TOPPING
30g Fine Sugar
1g Cinnamon Powder
Tart Form 24cm
Baking Mode: Top and bottom heating elements without fan
Baking Temperature: 200°C
Baking Time: 40 minutes
Baking time may vary depending on the accuracy and type of your oven.
Step 1

Mix the flour, butter, salt and fine granulated sugar at low speed with a stand mixer.
Step 2

Mix until the mixture has a fairly fine and gritty texture.
Step 3

Slowly add in the cold water and keep mixing.
Step 4

Mix until it forms a sticky dough.
Step 5

Wrap the dough in cling film and let it rest for about 2 hours in the fridge.
Step 6

After 2 hours, preheat the oven to 200°C. Dust the work surface with flour and roll out the dough to a thickness of 3 mm.
Step 7

Place the dough in a tart form and tidy up the side by removing the excess dough.
Step 8

Spread the bottom with breadcrumbs. This forms a protective layer between the filling and the dough bottom. Retaining the dough its crispy structure.
Step 9

Spread the cut plums over the tart crust
Step 10

Bake the tart at 200°C for 40 minutes
Step 11

As for the topping, mix sugar and cinammon together.
Step 12

Sprinkle the sugar and cinnamon mixture over the hot baked tart.
Step 13

Finished product.
