Red Velver Chiffon Cake


220gr. All Purpose Flour
100 gr. Fine Sugar
1 tsp. Baking Powder
1/2 tsp. Salt
2 gr. Instant Coffee
180 gr. Whole/Full Milk
100 gr. Oil
7 Eggs Yolks (eggs that weight 58-60 gr. each with shell)
30 gr. Melted Dark Chocolate 73%
1/2 tsp. Vanilla Essence
Red Food Colouring
7 Eggs Whites (eggs that weight 58-60 gr. each with shell)
2 tsp. White Vinegar (optional)
100 gr. Fine Sugar
Tube Pan Size: 23cm

Baking Mode: Top and bottom heating elements without fan.
Baking Temperature: 120°C
Baking Time: 75 minutes

After 75 minutes, increase the temperature to 150°C and set the baking mode to convection mode (top and bottom heating elements with fan). Continue baking for 20 minutes.
