Pork Bread Rolls
Soft bread rolls filled with a savoury pork filling inspired by Asian flavours.
These pork bread rolls bring together soft, fluffy bakery-style bread with a bold, savoury pork filling inspired by Thai stir-fry flavours. Ingredients like minced pork, long beans, lemon leaves, and red curry paste create a filling that is aromatic and deeply satisfying.
Finished with a piece of nori on top, the rolls take inspiration from Japanese sushi presentation while keeping the comfort of a classic bread roll.

Pork Filling
- 100 g long beans
- 3 lemon leaves
- 1 clove garlic
- 300 g minced pork
- 1 tsp sugar
- 2 tsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp Thai red curry paste
Bread Dough
- 500 g all-purpose flour
- 7 g instant yeast
- 30 g sugar
- 6 g salt
- 1 egg white
- 280 g milk
- 30 g unsalted butter
Instructions
Pork Filling
- Chop the long beans into small pieces.
- Slice the lemon leaves into thin strips.
- Finely mince the garlic.
- Prepare the minced pork (chicken can be used as a substitute).
- In a pan, combine pork, long beans, lemon leaves, garlic, sugar, soy sauce, oyster sauce, and Thai red curry paste.
- Stir-fry until the meat is cooked and the released juices thicken. No cornstarch is needed. Set aside to cool.
Soft Bread Rolls
- Combine flour, instant yeast, sugar, salt, egg white, and milk in a mixing bowl.
- Mix on low speed for 1 minute.
- Increase speed and continue mixing for 5 minutes.
- Add butter and mix for another 6 minutes until smooth.
- Check dough elasticity using the windowpane test.
- Divide the dough into 11 portions (60 g each).
- Flatten each portion, add pork filling, and seal into a ball.
- Place on a baking tray and proof until doubled in size.
- Brush with milk and attach nori if desired.
- Bake in a preheated oven at 170°C for 18 minutes.
- Brush lightly with oil after baking.
