Sour Cream Cookie Sandwich

Ingredients
The Cookie Dough
- 120 g salted butter
- 100 g icing sugar
- 2 egg yolks
- 50 g sour cream
- 340 g all-purpose flour
The Filling
- 170 g whipping cream
- 100 g chocolate (73%)
- 40 g unsalted butter
- 80 g honey
Instructions
- Let’s start by creaming the butter in a large mixing bowl. Then add in the icing sugar into the creamed butter and mix till well combined.
- Add in the egg yolks and sour cream and mix until smooth. Now add in the flour. Mix and fold with a spatula, or you can use your hand to mix until everything is well combined.
- Roll the dough till 5 mm in thickness, then place a 3 mm guide on each side of the dough. Press firmly and roll. Cut out the desired shape using a cookie cutter. You may refrigerate the cut out cookie dough for 30 minutes before baking.
- Bake in the preheated oven at 180°C for 15 minutes, or until the edges are lightly golden. Once done, remove the cookies and let them cool completely on a wire rack.
- Bring the whipping cream to a boil. Add the hot cream to the chocolate, then add in the honey and butter. Stir with a whisk until the chocolate is fully melted and well combined. Cover and refrigerate for 30 minutes to 1 hour. Gently mix the cold filling with a spatula.
- Pipe a generous amount of filling onto the cookies. Place another cookie on top and press gently to form a sandwich. Your cookie sandwich is now ready to eat.
Tip
- If the dough feels too soft to cut cleanly, chill it for 15 to 20 minutes longer before cutting.
