Orange Tart

Step 1

Bring the water and sugar to a boil to create a simple syrup. Immerse the orange slices in the hot syrup for 2 minutes.

Remove the orange slices from the syrup, then place them on a kitchen towel to drain.

In a large bowl, combine the flour, icing sugar, vanilla sugar, salt, egg, and butter. Mix and knead until a smooth dough forms.

Wrap the dough in cling wrap and chill it in the refrigerator for 20 minutes to allow it to firm up.

Once chilled, roll the dough into a rectangular shape, aiming for a thickness of about 3mm.

Using a tart ring of 7cm in diameter, cut out circles from the dough.

Cut additional dough strips that are about 2.5cm to 3cm wide.

Gently roll each cut-out dough strip.

Line the edges of the tart rings with the rolled dough strips.

Trim away any excess dough using a small knife.

Lightly dust the bottom of the tart with flour.

Spoon 1 teaspoon of orange jam into each tart shell and set aside.

In a separate bowl, whisk the butter until it's light and fluffy.

Add the icing sugar and almond flour to the whipped butter and mix. The mixture may appear crumbly initially, but continue mixing. After 1 or 2 minutes, it should transform into a paste-like consistency.

Add in the eggs, continuing to mix.

Add in the lemon juice and continue to mix.

Finally, incorporate the flour into the mixture.

Fill a piping bag with the batter and pipe it into the tart shells. Place an orange slice on top of each tart.

Bake the tarts in a preheated oven at 190°C for 15 minutes, or until golden brown and set.

While the tarts are still warm, brush the tops with an apricot glaze for a glossy finish.
