Mastering Shortbread Crust

Creating a perfect, buttery shortbread crust can transform your cheesecake from good to extraordinary. A handmade crust adds a personal touch and a burst of rich flavor that pre-made crusts just can’t match. Here’s a guide to help you master the art of making shortbread crust from scratch for your cheesecake.

Shortbread Ingredients:

250g All-Purpose Flour
100g Icing Sugar
40g Almond Flour
1g Salt
1 Egg
140g Unsalted Butter (cold)

Instructions:

Step 1: Mix the Ingredients
In a food processor, combine the sifted flour, icing sugar, salt, almond flour, egg, and butter. Blend until all ingredients are completely mixed in, and a fine crumb has formed.

Step 2: Form and Bake
Knead the crumb-like mixture into a dough ball. Roll out the dough between two sheets of parchment paper to a thickness of 3 to 4 mm. Bake it at 170°C for 15-20 minutes or until golden brown.

Step 3: Cool and Store
Allow the shortbread to cool down at room temperature. Once cooled, break them into smaller pieces for easy storage.


For the Cheesecake Base:

350g Shortbread
60g Ground Roasted Pistachio Nuts
60g Unsalted Butter (room temperature)

Instructions:

Step 1: Prepare the Base
Grind 350g of the shortbread in a food processor until fine crumbs form. Then, transfer the crumbs to a mixing bowl and add in the ground roasted pistachio nuts and softened butter. Use your hands to mix until the ingredients are well combined and the mixture is homogeneous. Mixing by hand in this step allows you to feel the texture and ensure that all ingredients are integrated properly, leading to a more cohesive and stable crust.

Step 2: Form the Borders
Place 2/3 of the mixture into a springform cake pan (18 cm in diameter and 6 cm high). Press it to the sides of the pan to form even borders.

Step 3: Form the Bottom
Pour the rest of the mixture into the cake pan and press it to form the bottom part of the crust.

Step 4: Stabilize the Crust
Place the cheesecake base in the fridge for 10 minutes to stabilize.

Step 5: Fill the Crust
Once the crust is set, pour in your favorite no-bake cheesecake filling.
