The Perfect Matcha Cake: A Recipe for Tranquility

Matcha, the finely ground green tea powder, is not only a staple in traditional Japanese tea ceremonies, but also a beloved ingredient in desserts around the world. From its vibrant green hue to its rich, earthy flavour, matcha transforms simple bakes into something special. This Matcha Cake is easy, delightful, and the perfect companion for tea or coffee.

Matcha, which means "powdered tea", has a deep connection to mindfulness and tea culture in Japan. Traditionally used in tea ceremonies, it’s valued for its vibrant green colour and distinctive earthy flavour. When baked into a cake, matcha brings a sense of balance and quiet richness that feels both comforting and refreshing with every bite.

This Matcha Cake suits almost any occasion. It’s refined enough for a small gathering, yet simple enough for a quiet afternoon snack. The method is straightforward and beginner-friendly, using basic ingredients and a short mixing time to achieve a soft, even crumb.

After baking, brushing the surface with a little melted butter gives the cake a subtle shine and enhances its aroma. Serve it plain, lightly dusted with icing sugar, or with a dollop of whipped cream. It also makes a thoughtful gift when wrapped in parchment paper or placed in a simple box and shared with care.

Ingredients

  • 150 g All-Purpose Flour
  • 120 g Fine Sugar
  • 10 g Matcha Powder
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 50 g Oil
  • 70 g Milk
  • 2 Eggs

Pan

  • Mould size: 20 cm x 10 cm x 6.5 cm

Baking

  • Oven temperature: 180°C (356°F)
  • Baking time: 30 minutes

Instructions

  1. Grease a mould (20 cm x 10 cm x 6.5 cm) with butter.
  2. In a large bowl, mix the dry ingredients (flour, sugar, matcha powder, baking powder, and salt) using a hand whisk.
  3. Add the oil, milk, and eggs. Whisk until just combined.
  4. Use a hand mixer and beat on high speed for 1 minute to incorporate air and create a smooth batter.
  5. Pour the batter into the prepared mould. Tap the pan gently on the counter to release any large air bubbles.
  6. Bake in a preheated oven at 180°C (356°F) for 30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.
  8. Optional: Brush the top with melted butter for a glossy finish.

Tip

  • For the best colour and flavour, sift the matcha powder to remove lumps before mixing.
